Ingredients
  

  • For the Peach Filling:
  • 2 cups fresh frozen, or canned peaches (chopped)
  • ½ cup light brown sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg optional
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons cornstarch
  • ½ teaspoon vanilla extract
  • For the Egg Rolls:
  • 10 egg roll wrappers
  • 2 tablespoons water for sealing
  • Vegetable oil for frying
  • For the Vanilla Dipping Sauce:
  • ½ cup powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon vanilla bean paste or extract

Instructions
 

  • Step 1: Prepare the Peach Filling
  • In a small saucepan, combine chopped peaches, brown sugar, cinnamon, nutmeg, and lemon juice over medium heat.
  • Cook until the peaches soften and release juices (about 5-7 minutes).
  • Stir in cornstarch and continue cooking for 2 minutes until the mixture thickens.
  • Remove from heat and let the filling cool completely before using.
  • Step 2: Assemble the Egg Rolls
  • Lay an egg roll wrapper on a clean surface, placing 2 tablespoons of the peach filling in the center.
  • Fold in the left and right sides, then roll tightly from the bottom up, sealing the edges with a little water.
  • Repeat with remaining wrappers.
  • Step 3: Fry to Perfection
  • Heat vegetable oil in a deep fryer or pot to 350°F (175°C).
  • Fry 2-3 egg rolls at a time, turning occasionally, for 3-4 minutes until golden brown.
  • Remove and drain on paper towels.
  • Step 4: Make the Vanilla Dipping Sauce
  • In a small bowl, whisk together powdered sugar, milk, and vanilla bean paste until smooth.
  • Step 5: Serve and Enjoy!

  • Dust with powdered sugar for extra sweetness.

Notes

For a healthier option, bake at 375°F for 15-18 minutes or air-fry at 380°F for 12-15 minutes.
