Step 1: Prepare the Peach Filling
In a small saucepan, combine chopped peaches, brown sugar, cinnamon, nutmeg, and lemon juice over medium heat.
Cook until the peaches soften and release juices (about 5-7 minutes).
Stir in cornstarch and continue cooking for 2 minutes until the mixture thickens.
Remove from heat and let the filling cool completely before using.
Step 2: Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface, placing 2 tablespoons of the peach filling in the center.
Fold in the left and right sides, then roll tightly from the bottom up, sealing the edges with a little water.
Repeat with remaining wrappers.
Step 3: Fry to Perfection
Heat vegetable oil in a deep fryer or pot to 350°F (175°C).
Fry 2-3 egg rolls at a time, turning occasionally, for 3-4 minutes until golden brown.
Remove and drain on paper towels.
Step 4: Make the Vanilla Dipping Sauce
In a small bowl, whisk together powdered sugar, milk, and vanilla bean paste until smooth.
Step 5: Serve and Enjoy!
Serve the warm peach cobbler egg rolls with the vanilla dipping sauce.
Dust with powdered sugar for extra sweetness.
