Instructions

  • Step 1: Prepare the Mascarpone Mixture
  • In a large mixing bowl, whisk the egg yolks and sugar until the mixture turns pale and creamy (about 3–4 minutes).
  • Gently fold in the mascarpone cheese and vanilla extract until smooth and well combined.
  • Step 2: Soak the Ladyfingers
  • Brew strong coffee or espresso and let it cool slightly. If using liqueur, mix it into the coffee.
  • Quickly dip each ladyfinger into the coffee mixture for 1–2 seconds (avoid oversoaking).
  • Step 3: Assemble the Layers
  • Arrange a layer of soaked ladyfingers at the bottom of your serving dish.
  • Spread a layer of the mascarpone mixture over the ladyfingers.
  • Repeat the process with another layer of soaked ladyfingers and mascarpone.
  • Smooth the top with a spatula for an even finish.
  • Step 4: Chill and Serve
  • Cover and refrigerate for at least 4 hours (overnight for best results).
  • Before serving, dust the top with cocoa powder using a fine sieve.
  • Garnish with chocolate shavings or fresh berries if desired.

Notes

For the best flavor, chill the dessert overnight before serving. This allows the layers to set properly and enhances the taste.
If you prefer a stronger coffee flavor, add an extra shot of espresso or a small amount of coffee extract.
When dipping the ladyfingers, do so quickly to avoid them becoming too soggy. A 1–2 second dip is enough.
If your mascarpone mixture is too runny, try refrigerating it for 15–20 minutes before layering.
To make a non-alcoholic version, simply omit the rum or Amaretto.
Dust cocoa powder on top right before serving to keep it fresh and prevent it from absorbing moisture.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
